- 2 leeks, cut into small pieces
- 100 gr bean sprouts, boiled briefly
- 5 shallots
- 5 cloves garlic
- 1 cm ginger
- 2 cm galangal
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tbsp sugar
- 1/2 tsp cumin, roasted
- 1/2 teaspoon coriander, roasted
- 6 red chilies
- 3 onions
- 2 cloves garlic
- 2 tbsp tauco
- 1 lime

- If you prefer beef, you can use it instead of chicken. However, with beef you must cook longer because it takes time for this meat to become tender. Bring chicken to a boil, set the broth aside.
- Boil rice water in a large pot.
- Saute ground spices until the aroma comes out. And then add this mixture into the large pot. Wait for 5 minutes and pour the chicken broth.
- As the broth is boiling, add the ground peanuts and chicken. Bring it to a simmer. It’s better to cook it over low heat to avoid evaporation. Add lemon grass, lime leaves, and bay leaves.
