Duck dishes are quite easy to find in the country because this type of poultry is widely bred there. Your task is to find a food stall that offers foods made of duck. It has a unique texture which can easily be differentiated from chicken. Many people think that they taste the same. They are quite similar, but not the same. The first that we want to try is spicy duck. Here’s how to make it:

Spicy duck ingredients:

  • 1 whole duck, cut into 3 slices or more
  • 1 cinnamon stick
  • 4 cloves garlic
  • 4 kafir lime leaves
  • 1 turmeric leaf (this is not mandatory)
  • 2 bay leaves
  • 3 tbsp cooking oil
  • 150 ml thick coconut milk
  • 250 ml water

Seasoning paste:

  • 4 big red chilies
  • 4 cloves garlic
  • 5 shallots
  • 1 big tomato
  • ½ tsp turmeric powder
  • ½ tbsp coriander powder
  • ½ tsp pepper powder
  • 3 cm ginger
  • 2 cm galangal
  • 1 tsp pinch of salt

Directions:

  1. Make a paste out of the seasoning ingredients. Then, heat oil in a large saucepan. Pour the paste into the pan and saute until it becomes fragrant. Next, you have to add the cinnamon, kafir lime lives, garlic, turmeric leaf, and bay leaves. Keep stirring until the paste thickens and the aroma gets stronger.
  2. Add the duck meat and cover the slices in paste. Lower the heat and keep cooking for like 5 minutes.
  3. Add water, bring it to a boil. Once it is boiling, reduce heat to a simmer, and add coconut milk afterwards. Coconut milk should be added later to maintain its texture. Cook for about 30 minutes until the duck is tender.
    Remove the duck from the broth and set aside.
  4. The next step is to roast it.
  5. Turn on the oven to 200 degrees Celsius. Arrange the duck slices on a baking tray. The broth can also be poured all over the duck, so that it seeps into the meat while it is being cooked.
  6. Put it in the oven for about 25 minutes. At this point, the duck should’ve been completely well-done.
  7. Remove from the oven and serve with raw vegetables.

  • 1 whole duck
  • 300 g spinach leaves, shredded

  • 8 cloves garlic
  • 12 shallots
  • 2 cm ginger
  • 1 cm turmeric
  • 1 cm galangal
  • 4 candlenuts, crushed
  • 2 tsp shrimp paste, roasted
  • 5 red chilies, roughly chopped
  • 1 lemongrass stalk, crushed and tie to a knot
  • 3 kaffir lime leaves, sliced
  • 2 tbsp peanut oil
  • 1 tsp peppercorns, crushed
  • 2 tsp coriander seeds, crushed
  • 2 tbsp lime juice
  • 2 tbsp grated palm sugar
  • 3 tsp salt
  • 3 tbsp water

Directions:

  1. Preheat the oven to 160 ° C. While waiting, wash the duck with running water. Clean the inside of the duck and rub turmeric all over it.
  2. Mix the seasoning ingredients with a blender. Add some water and create a thick paste.
  3. Use the half portion of the seasoning paste to rub the whole part of the duck. Meanwhile, the rest should be combined with the spinach leaves. Stuff the duck with the spinach leaves and cinnamon stick. Wrap it in the banana leaf. If you can’t find any, the best replacement is aluminum foil. Just wrap it up before putting it in the oven.

  1. Heat oil in a sauce pan over medium heat. Mix the seasoning ingredients with a blender. Add some water to create a thick paste. Saute the paste as well as lime leaves, lemongrass, bay leaves, sugar, and salt. Once it becomes fragrant, add duck and keep cooking until it is covered in paste and turns golden brown.
  2. Add the rest of the water, bring it to a boil. Transfer to a bowl and set the broth aside.
  3. Arrange the duck slices on a grill pan and cook until for 10 more minutes. There is no need to cook for too long because boiling ensures that the duck is already well-done. Apply soy sauce with a brush all over the duck and roast both sides alternately. Serve with hot rice.
