Indonesian Dish Recipe : Coto Makassar

  • 5 shallots
  • 5 cloves garlic
  • 1 cm ginger
  • 2 cm galangal
  • 1/2 tsp pepper

  • 1/2 tsp cumin, roasted
  • 1/2 teaspoon coriander, roasted

Chili paste:

  • 6 red chilies
  • 3 onions
  • 2 cloves garlic
  • 2 tbsp tauco

Additional ingredients:

  • 1 lime
  • Prawn crackers
  • Fried onions

Directions:

  1. If you prefer beef, you can use it instead of chicken. However, with beef you must cook longer because it takes time for this meat to become tender. Bring chicken to a boil, set the broth aside.
  2. Boil rice water in a large pot.
  3. Saute ground spices until the aroma comes out. And then add this mixture into the large pot. Wait for 5 minutes and pour the chicken broth.
  4. As the broth is boiling, add the ground peanuts and chicken. Bring it to a simmer. It’s better to cook it over low heat to avoid evaporation. Add lemon grass, lime leaves, and bay leaves.
