Chicken Salad with Mango Sauce

150 g chicken fillets
1 tablespoon BBQ sauce
½ tsp black peppercorns, crushed slightly smoother
1 tablespoon vegetable oil
200 g lettuce, roughly torn
1 red tomatoes, thinly sliced
75 g baby green beans, blansir

200 g of mango flesh, diced
3 tablespoons olive oil
1 tablespoon lemon juice
½ tsp sugar
½ teaspoon pepper
½ teaspoon salt


* Marinate chicken fillet with BBQ sauce, pepper and vegetable oil until blended.
* Cook on a flat pan and baked until change of color on both sides.
* Lift, roughly sliced. Set aside.
* Arrange the salad ingredients in a bowl / serving dish.
* Pour the sauce and stir well.
* Sprinkle the chicken pieces.
* Serve immediately.
