Bubur Ayam / Chicken Porridge Recipe

Bubur ayam is one of the well-known dishes in Indonesia. It is actually popular in other places, too. Well, the ingredients are easy to find as it uses some typical Asian spices. The most important one is the porridge. It should be cooked for hours until it becomes tender. The porridge should be moist, not too thick. Just in case you find it too thick, add more water. It tastes best when served hot.

It makes a perfect menu for breakfast. There are a few variations when it comes to chicken porridge. Just come here, you will come across plenty of chicken porridges. There are Cirebon chicken porridge, Manado chicken porridge, and many others. Despite having different flavors, they use similar spices. The toppings are the ones that make them different.

Bubur ayam ingredients:

  • ¼ kg rice
  • 2 liters water
  • 2 bay leaves
  • 3 tsp salt

Chicken broth ingredients:

  • 500 grams chicken breast
  • 1 liter water
  • 1 cm ginger, smashed
  • 1 cm galangal, smashed
  • 2 stalks lemongrass, bruised


  • 6 cloves garlic
  • 7 onions
  • 2 pieces hazelnut
  • 1/2 teaspoon cinnamon powder
  • 2 bay leaves
  • 1 tsp coriander
  • 1 tsp pepper
  • 1 cm turmeric
  • 3 tbsp coarse salt
  • 4 tbsp sweet soy sauce
  • 3 tbsp vegetable oil

Bubur Ayam Chicken Porridge Recipe


  1. Heat a pan over medium heat. Add water and chicken breast, bring it to a boil. You can cut the chicken into smaller pieces, so that it takes shorter to make them tender.
  2. Add ginger, lemongrass, and galangal into the mixture. Keep stirring.
  3. When the chicken is already tender, remove and set aside. When it’s cool, shred it.
  4. Next, you have to cook the rice and the seasoning. Heat oil in a saucepan, add all the seasoning ingredients. Saute until it becomes fragrant.
  5. Pour the chicken broth into the mixture and bring it to a boil. Add rice, bay leaves, and salt. Cook until the rice turns into porridge. Check out the consistency of the porridge. If it is too thick, add more water. If it’s too thin, cook longer because the water will evaporate. The porridge will thicken on its own. However, you need to stir it occasionally to prevent burning. The bottom of the pan can burn if it is made of aluminum. A teflon is a safer option if you do not want to constantly stir the porridge.
  6. When it’s fully cooked, serve the porridge with the shredded chicken, prawn crackers, sliced ??leeks, celery, and?? fried sliced onions. Some people also like to eat with soy sauce, ketchup, and chili. It does not matter. You can add as many toppings as you want. You can even add vegetables like when you serve gado-gado.
